No-Bake Fruit Cake Recipe
Ingredients
| Seedless raisins | 1 Pound | |
| Pitted dates | 1 Pound | |
| Dried apricots | 1 Pound | |
| Shredded coconut | 1 Pound | |
| Shelled walnuts | 1 Pound | |
| Salt | 1/4 Tablespoon | |
| 1/4 cup rum, cognac or bourbon | ||
| 1 t.vanilla extract | ||
Directions
Chop coarsely raisins, dates, apricots, coconut and walnuts in food processor or food chopper.
Empty mixture into a large mixing bowl.
Add salt, vanilla and liquor.
Blend well.
Spoon and pack the mixture into a mold or molds, or 2 6-cup loaf pans.
Cover with foil and place a weight on top.
Refrigerate 3 days or keep in a cold place to "age".
Serve thinly sliced.
