No Crust Zucchini Quiche Recipe
Ingredients
2 medium-sized zucchini, coarsely shredded
1/2 pound Swiss cheese, coarsely shredded
4 eggs
1 cup buttermilk baking mix
1/4 cup salad oil
1/2 teaspoon salt
1/4 teaspoon Italian seasoning
Directions
1. Preheat oven to 400°F. Grease 9-inch pie plate.
2. In large bowl, with fork or wire whisk, mix zucchini, cheese, eggs, buttermilk baking mix, salad oil, salt, and Italian seasoning until well blended. Pour mixture into prepared pie plate. Bake quiche 30 to 35 minutes, until golden brown and knife inserted in center comes out clean.
