Nine Day Pickles Dressing Recipe
Ingredients
Dressing:
1 1/2 quarts cider vinegar
3 lbs. white sugar
1 ounce each celery seed, allspice,cinnamon stick (tied together in a cheesecloth bag)
Directions
(Use 4-inch cucumbers, or, if desired gherkin pickles may be made by using the very tiny cucumbers).
Wash 4 quarts cucumbers, cut in rounds.
Place in stone jar or crock.
Make a brine of 1 cup salt to 2 quarts boiling water, and pour over cucumbers immediately.
Let stand 3 days.
Drain brine off cucumbers and bring to the boil.
Pour over cucumbers again and allow to stand for another 3 days.
Drain and rinse cucumbers and pour over them 1 gallon boiling water in which 1 tablespoon alum had been dissolved.
Let stand for 6 hours.
Drain well and pour the dressing over them Bring the syrup to the boil.
Pour over the cucumbers and allow to stand for 3 days€”drain and bring syrup to the boil each day and pour over the cucumbers.
The third day put the pickles into hot sterilized jars and seal airtight.
