Nine Day Pickles Recipe

Ingredients
Take:
1 quart Heintz vinegar
2 tablespoons mustard seed
2 tablespoons whole allspice
2 tablespoons pepper corns
2 pieces ginger root
2 blades mace
2 roots horse radish
2 lbs. brown sugar
1 teaspoon whole cloves Cinnamon bark
1/2 dozen bay leaves
1 package mixed spices About
2 gallons Heintz malt vinegar. (I boil my spices and quart of vinegar together a second time)
Directions
Wash and brush several dozen small cucumbers.
Make a brine of 1 cup of salt to 1 gallon water.
Bring to a boil and pour over cucumbers.
Let stand three days and repeat.
Let stand another three days.
Then pour off brine and take one gallon boiling water and a good sized piece of alum and soak again for another six hours.
Drain and wash well.
Bring the 2 gallons of vinegar to boiling point and add above mixture on the 9th day.
Pour over cucumbers.
Keep in covered stone jar.
Add horse radish and ginger roots when vinegar is cool.
Make a brine of 1 cup of salt to 1 gallon water.
Bring to a boil and pour over cucumbers.
Let stand three days and repeat.
Let stand another three days.
Then pour off brine and take one gallon boiling water and a good sized piece of alum and soak again for another six hours.
