Nighthawk Applejack Cake Recipe
Ingredients
| Butter | 1/2 Cup (16 tbs), melted | |
| Packed brown sugar | 1/3 Cup (16 tbs) | |
| 3 medium-sized tart apples | ||
| Granulated Sugar | 1 Cup (16 tbs) | |
| Pecans and walnuts | 1/2 Cup (16 tbs) | |
| 1 egg, lightly beaten | ||
| 2 tablespoons Yukon Jack whiskey, plus more for serving | ||
| Vanilla extract | 2 Teaspoon | |
| All purpose flour | 1 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
Directions
PREHEAT THE OVEN to 350°F Grease an 8- or 9-inch round cake pan.
COMBINE 1/4 CUP of the melted butter with the brown sugar, stir to mix well, and pour into the cake pan.
Peel, core, and thinly slice one of the apples.
Arrange the apple slices in the bottom of the pan and set aside.
PEEL, CORE, and coarsely chop the remaining 2 apples and put them in a large bowl with the remaining 1/4.
cup melted butter, the granulated sugar, nuts, egg, Yukon Jack, and vanilla.
Stir to mix.
COMBINE THE FLOUR, baking soda, and salt in another bowl.
Stir the dry ingredients into the apple mixture until well combined.
Pour the batter into the cake pan and bake until a toothpick inserted in the center of the cake comes out clean, about 50 minutes.
Allow the cake to rest for 10 minutes, then carefully turn it out onto a serving plate.
Lace the top with a generous splash of Yukon Jack and serve.
