Nigerian Groundnut Stew Recipe
Ingredients
| 2 pounds boneless lamb for stew | ||
| Onions | 3 Large, sliced | |
| Salt | 3 1/2 Teaspoon | |
| Water | 3 1/2 Cup (16 tbs) | |
| Ripe tomatoes | 3 Large, quartered | |
| 3 chili peppers, washed and seeded | ||
| Peanut butter | 1 Cup (16 tbs) | |
| 2 cups beef bouillon | ||
| Hot cooked rice | 4 Cup (16 tbs) | |
| 6 hard-cooked eggs, shelled | ||
Directions
MAKING
1) In large saucepan, add the lamb, onions, salt and 3 cups water, then allow to boil, cover and simmer for an hour or until meat is just tender.
2) In another saucepan add the tomatoes, peppers and 1/2 cup water, then allow to boil, cover and simmer for 8-10 minutes.
3) Pass the mixture through a sieve.
4) Combine the peanut butter, tomato mixture, and bouillon, then stir into the meat and simmer until the meat is soft.
SERVING
5) Spoon the cooked rice in each soup plate, place an egg in the center, pour over the stew and serve immediately.
