Nicoise Soup Recipe

Ingredients
4 cups Basic Beef Stock
2 tablespoons olive oil
1/2 teaspoon salt
2 peppercorns
2 cloves garlic, chopped
1 bay leaf
2 sprigs parsley
4 poached eggs
1/2 teaspoon dried thyme
Directions
Combine stock, oil, salt, peppercorns, garlic, bay leaf and parsley in large saucepan; bring to boil.
Reduce heat; simmer 15 minutes.
Remove peppercorns, bay leaf, and parsley; ladle soup into 4 soup bowls.
Place 1 egg in each soup bowl; sprinkle with thyme.
