Ingredients

 
Butter - 2 tbsp.
 
Flour - 8 tbsp.
 
Cheddar cheese - 1/2 lb., diced
 
Chicken broth - 3 cups
 
Milk - 2 cups, scalded
 
Onion - 1 thin slice
 
Warm cream - 1 cup
 
Salt and pepper

Directions

MAKING
1. In saucepan melt butter over low heat.
2. Stir in flour and cheese and add broth gradually, stirring constantly.
3. Simmer adding milk and onion until thickened.
4. Strain and simmer liquid for 10 minutes, stirring constantly.
5. Stir in cream, salt and pepper.

SERVING
6. Sprinkle with freshly cut parsley, if desired and serve.
