Ingredients

 Cod2 Pound, diced
 2 potatoes, finely diced
 Leeks2 , chopped
 Celery leaves, chopped fine
 1 slice lean salt pork
 Boiling water to cover vegetables
 2 cups hot milk
 Salt To Taste
 Pepper To Taste

Directions

Put successive layers of potatoes, leeks, celery greens, seasoning and pork in clay baker.
Cover with boiling water.
Close and bake 1/2 hour.
Remove clay baker from oven (be careful of steam), lower oven temperature.
Add pieces of fish.
Stir in hot milk.
Season again.
Close and bake another 20 minutes.

The recipe above is lacking oven temperatures... I ventured 450F for the first 1/2 hour (potatoes were underdone) and 350F once the fish/milk were added to recipe... Does anybody have a clue? Other than that, this was very tasty. Thank you!

I would love your cod recipe as long as it is made in a clay dutch oven - I am new to this method of cooking - what the heck, even if it is not in a clay pot... I tried making the recipe with sheepshead instead of cod and the fish came out perfect.
