New Year's Black-Eyed Peas And Rice Recipe
Ingredients
1/2 cup water
1 cup chopped onions
1 clove garlic, minced
2 cups chopped fresh or low-sodium canned tomatoes
1/2 teaspoon dried basil leaves
1/4 teaspoon dried thyme leaves
3 cups cooked long-grain white or brown rice
2 cups home-cooked or canned black-eyed peas, rinsed and drained
1/4 teaspoon black pepper
Directions
Place 1/4 cup of the water in a large skillet over medium heat.
Add onions and garlic.
Cook and stir for 5 minutes.
Add more liquid if necessary during this process.
Add the tomatoes, the remaining 1/4 cup water, basil leaves, and thyme leaves.
Simmer for 5 minutes.
Stir in the rice, black-eyed peas, and black pepper.
Simmer for 15 minutes.
Add onions and garlic.
Cook and stir for 5 minutes.
