11/2 pounds small new potatoes
 
1 (1.3-ounce) package Italian reduced-calorie salad dressing mix
 
1/2 cup thinly sliced celery
 
3 tablespoons minced green onions
 
3 tablespoons minced fresh parsley
 
1 tablespoon chopped pimiento Leaf lettuce

Directions

Cook potatoes in boiling water 10 to 15 minutes or until tender; drain and cool.
Cut potatoes into 1/4-inch slices; layer in a shallow serving dish.
Prepare salad dressing mix according to package directions; combine salad dressing and next 4 ingredients.
Pour evenly over potatoes; cover and chill the salad thoroughly.
Serve on lettuce leaves.
