Ingredients
3 ounces pork fat, diced
5 ounces onions, diced
3 ounces celery, diced
1 teaspoon chopped fresh garlic
6 ounces clams, chopped
1/4 cup bacon drippings
1/4 cup flour
1 1/2 quarts clam juice
10 ounces potatoes, diced
2 cups milk
2 cups heavy cream
1 teaspoon basil leaves
Salt and pepper to taste
2 teaspoons Worcestershire sauce
Directions
Saute the pork fat, onions, celery, garlic and clams in the bacon drippings in a large skillet over medium-low heat for 2 minutes.
Sprinkle with the flour and saute for 1 minute longer.
Stir in the clam juice.
Bring to a boil.
Reduce heat.
Simmer for about 40 minutes.
Stir in the next 6 ingredients.
Simmer for 10 minutes longer.
Stir in the Worcestershire sauce just before serving.
Serve with oyster crackers.
