New England Boiled Dinner Recipe
New England Boiled Dinner is a unique dish that is a meal in itself. You can serve this wonderful dish at home for a grand dinner. I made this for my meat loving husband for our anniversary dinner and he loved it! Try the New England Boiled Dinner and you will understand!
Ingredients
| Corned beef brisket | 1 Pound | |
| Water | ||
| Salt pork | 4 Ounce | |
| Onions | 6 Small | |
| Potatoes | 4 Medium, quartered | |
| Carrots | 4 Medium, quartered | |
| Parsnips | 3 Medium, cut in to chunks | |
| Rutabagas | 2 Medium, peeled | |
| 1 small cabbage, cored and cut in wedges | ||
| Salt | To Taste | |
| Pepper | 1 | |
Directions
Place corned beef in large kettle or Dutch oven; add water to cover meat.
Add salt pork, if desired.
Bring to boiling; reduce heat and simmer, covered, till corned beef is tender, about 2 1/2 hours.
Remove corned beef and salt pork from kettle.
Add onions, potatoes, carrots, parsnips, and rutabagas to cooking liquid.
Cover; cook 15 minutes.
Add cabbage; cover and cook till cabbage is tender, 15 to 20 minutes more.
Return corned beef to kettle; heat through.
Transfer corned beef and vegetables to serving platter.
Season to taste with salt and pepper.
