New York Steak with Tobacco Onions Anasazi Bean Chili and Blackstrap Barbecue Sauce Recipe

| 1 cup anasazi beans, soaked in water for 8 hours or overnight | ||
| 4 tomatoes, peeled and diced | ||
| Dried oregano | 1 Teaspoon (Anasazi Bean Chili (yields 4 cups):) | |

Directions
GETTING READY
1)To prepare chili, saute onion, poblano, bell pepper and chili in oil. Add in garlic, mole paste and continue to saute.
2)Mix in tomato, beans, cimun, thyme, beer and oregano. Simmer for 1 hour or 1 ½ hour until beans are soft. Season to taste.
MAKING
3)To prepare sauce, stir fry onion, garlic and 3 vinegars. Reduce volume to half by simmering.
4)add in all spice, cumin, cloves, molasses, sugar, mole paste, ketchup, Worcestershire sauce and for 20 minutes simmer.
5)To prepare onions, add in the seasoning, and deep fry to crispness.
6)To prepare steak, gril seasoned ove medium hot coals. Let internal juices get thoroughly incorporated.
SERVING
7)On serving plate, place a hot chili at center, top with steak followed by onions. Drizzle sauce around plate and serve hot.
