New Year's Day Black Eyed Peas Recipe
Ingredients
| 1/2 pound dried black-eyed peas. , sorted and rinsed | ||
| Water | 4 Cup (16 tbs) | |
| 1/3 cup Extra Virgin | ||
| Olive Oil | ||
| Onion | 1 Small, chopped | |
| Wine vinegar | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| Pepper | 1/2 Teaspoon | |
| Bay leaf | 1 Large | |
| Dried thyme leaves | 1/8 Teaspoon, crushed | |
Directions
Place peas and water in medium saucepan; bring to a boil over high heat.
Reduce heat; stir in olive oil, onion, vinegar, garlic, pepper, bay leaf and thyme.
Cover; simmer 1 hour or until peas are tender.
Drain peas; remove and discard bay leaf
