Ingredients

 1/2 pound dried black-eyed peas. , sorted and rinsed
 Water4 Cup (16 tbs)
 1/3 cup Extra Virgin
 Olive Oil
 Onion1 Small, chopped
 Wine vinegar2 Tablespoon
 Garlic1 Clove (5gm), minced
 Pepper1/2 Teaspoon
 Bay leaf1 Large
 Dried thyme leaves1/8 Teaspoon, crushed

Directions

Place peas and water in medium saucepan; bring to a boil over high heat.
Reduce heat; stir in olive oil, onion, vinegar, garlic, pepper, bay leaf and thyme.
Cover; simmer 1 hour or until peas are tender.
Drain peas; remove and discard bay leaf
