 Fingerling16 Small
 Olive oil (not your best extra virgin)
 Salt To Taste
  black pepper1
 Sprigs fresh thyme
 Cloves from 1/2 head garlic, whole

Directions

1. Preheat the oven to 400°F. Wash any dirt off the potatoes. Gently coat with olive oil, and season well with salt and pepper. Add a few sprigs of thyme and the garlic.
2. Place in a baking dish, and cover with aluminum foil. Bake for 30 to 40 minutes, depending on the size of the potatoes. The potatoes are done when they can be easily pierced with a knife. Serve with the Salmon with Wilted Spinach and Fennel and Almond Relish.
