Ingredients
2 pounds small red potatoes
Water
1 3-ounce package cream cheese, softened
1/2 cup milk
4 teaspoons lemon juice
3/4 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon minced fresh basil or 1/8 teaspoon dried basil
1 small bunch watercress
Directions
1. In 4- to 5-quart saucepot over high heat, heat unpeeled potatoes and enough water to cover to boiling. Reduce heat to low; cover and simmer 15 minutes or until fork-tender. Drain. Cool potatoes until easy to handle.
2. Meanwhile, prepare dressing: In large bowl, with wire whisk or fork, mix cream cheese, milk, lemon juice, sugar, salt, and basil.
3. Cut each potato in half; add potatoes to dressing. With rubber spatula, gently toss to mix well. Remove tough stems from watercress; gently stir watercress into potato mixture. Serve immediately. Or refrigerate to serve later.
