New Potato Salad with Herb Dressing Recipe
Ingredients
| 700 g/1 lb 9 oz new potatoes, scrubbed | ||
| 175 g/6 oz green beans, cut into 5cm lengths | ||
| Extra virgin olive oil | 3 Tablespoon (FOR THE DRESSING) | |
| Grated zest and juice 1 small lemon | ||
| Mint | 2 Tablespoon, chopped (FOR THE DRESSING) | |
| Parsley | 1 Tablespoon, chopped (FOR THE DRESSING) | |
| 1 tbsp snipped chervil or chives | ||
Directions
1. Bring a pan of salted water to the boil. Add the potatoes, then boil for 8 mins. Add the beans, then cook for a further 4-5 mins or until both are just tender.
2. Meanwhile, whisk all of the dressing ingredients together, then season well.
3. Drain the beans and potatoes well, then cut the potatoes in half. Toss with the dressing while still hot. Cover and chill until ready to serve. Bring to room temperature before serving.
