New Potato Salad Vinaigrette Recipe
Vinaigrette adds on to the taste of anything - be it fruit or vegetable and this New Potato Salad Vinaigrette is enough proof for that. Ingredients
4 pounds small red potatoes
Water
1/3 cup olive or salad oil
1/4 cup red-wine vinegar
2 tablespoons chopped parsley
1 tablespoon chopped chives
1 1/2 teaspoons salt
1 1/4 teaspoons sugar
2 teaspoons prepared mustard
1/8 teaspoon coarsely ground black pepper
3 large celery stalks, thinly sliced
Directions
1. In 5-quart saucepot over high heat, heat un-peeled potatoes and enough water to cover to boiling. Reduce heat to low; cover and simmer about 15 minutes or until potatoes are fork-tender; drain. Cool potatoes until easy to handle; cut each potato into quarters or bite-sized pieces (do not peel).
2. Meanwhile, in large bowl, with wire whisk or fork, mix olive oil and next 7 ingredients. Add potatoes and celery; with rubber spatula, gently toss to mix well. Cover and refrigerate at least 1 hour, tossing occasionally, to blend flavors.
