New Potato Roast Recipe

Are you looking for a yummmm New Potato Roast recipe? Then you are in luck! There is not a single month when I don't serve this yummy Appetizer! A good way to use up Vegetable is to make some irresistible New Potato Roast. I am certain both of us will be in agreement that this New Potato Roast is truly delectable.

Ingredients

 
2 lbs. small new potatoes
 
2 tsp olive oil
 
1/3 cup low-calorie margarine
 
Salt and pepper to taste
 
2 tsp fresh parsley, finely snipped

Directions

Peel and trim potatoes into smooth ovals.
Heat olive oil in a heavy skillet.
Add potatoes and saute over high heat, rotating potatoes until they are golden on all sides. (You may need to do these in several batches.) With a slotted spoon, place potatoes in a baking dish or casserole.
Drain any excess oil from skillet.
Melt margarine in same skillet and brown slightly.
Add salt and pepper to the margarine and pour over potatoes.
Bake at 350°F (175°C) for 15 to 20 minutes until potatoes are tender, stirring occasionally.
Transfer to a heated serving dish.
Sprinkle with fresh parsley.
