New Orleans Yams Recipe

Ingredients
1 can (1 pound) grapefruit and orange sections
2 tablespoons honey
1 tablespoon cornstarch
1/4 teaspoon salt
4 medium yams, cooked, peeled and halved lengthwise (or 2 cans 1 pound each yams, drained)
Flaked coconut
Directions
Drain grapefruit and orange sections, reserving 1 cup syrup.
Blend syrup with honey, cornstarch and salt in saucepan and cook and stir until mixture boils and is thickened.
Arrange grapefruit and orange sections and yams in buttered shallow casserole and pour sauce over casserole.
Sprinkle with coconut.
Bake in a 375° F.oven for 15 minutes or until hot and bubbly.
This casserole can be prepared in advance, refrigerated and baked at serving time.
Add 15 minutes to baking time.
