New Mexico Chicken Salad Recipe
Ingredients
| 1 bunch young rocket | ||
| Edible flowers of your choice | ||
| 6 radicchio leaves, shredded | ||
| 1 grapefruit, peeled, all white pith removed, segmented | ||
| Chicken breasts | 2 , smoked | |
| Pine nut and chili dressing | ||
| Pine nuts | 4 Tablespoon, toasted | |
| Bay leaves | 6 | |
| Red chilies | 2 , finely chopped | |
| Sugar | 2 Tablespoon | |
| 1/3 cup / 90 ml / 3 fl oz red wine vinegar | ||
| 1/4 cup / 60 ml / 2 fl oz olive oil | ||
Directions
1. Arrange rocket, flowers and radicchio attractively on serving plates. Top with grapefruit and chicken.
2. To make dressing, place pine nuts, bay leaves, chilies, sugar, vinegar and oil in a bowl and whisk to combine. Just prior to serving, drizzle dressing over salad.
