Ingredients
8 new beets, or 1 large can beets
3 or 4 whole allspice
3 teaspoons grated orange rind
1/2 cup orange juice 6 tablespoons sugar
4 teaspoons butter
1/4 teaspoon salt
1/2 tablespoon cornstarch dissolved in 1 teaspoon water
2 small pieces stick cinnamon
6 whole cloves
Directions
Clean the beets and cook them until tender (or heat canned beets).
Drain.
Cook the grated rind, sugar (the amount will vary according to the sweetness of the orange), salt, cinnamon, cloves, allspice, orange juice, and 1 tablespoon water for 5 minutes.
Add the butter to the mixture.
Add the dissolved cornstarch and cook slowly until the mixture is thick.
Strain.
Pour over the beets.
Canned beets are wonderful when prepared in this way, and beet liquor may be substituted for the water.
