| Flour | 1 1/2 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Baking soda | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
| Nutmeg | 1/2 Teaspoon | |
| Ginger | 1/2 Teaspoon | |
| Apple sauce | 3/4 Cup (16 tbs) | |
| 1/4 cup raisins Icing | ||
| Butter | 1/4 Cup (16 tbs) | |
| Cream cheese | 1/2 Cup (16 tbs), softened | |
| Vanilla extract | 1/2 Teaspoon | |
| Icing Sugar | 2 1/2 Cup (16 tbs) | |
Directions
Preheat oven to 350 °F (175 °C).
Butter a 9 inch (23 cm) cake pan.
In a bowl, mix carrots and sugar.
Fold in oil, then eggs.
In a second bowl, sift dry ingredients.
Add all at once to first mixture.
Fold in apple sauce and raisins.
Pour into pan.
Bake in oven 30-35 minutes.
Icing In a bowl, mix all ingredients.
Whip until smooth.
Spread over cold cake.
