Never-Fail Lemon Recipe

Ingredients
| 24 vanilla cookie wafers | ||
| Sweetened condensed milk | 1 1/3 Cup (16 tbs) | |
| Lemon juice | 1/2 Cup (16 tbs) | |
| 1 teaspoon grated lemon rind | ||
| Salt | 1/4 Teaspoon | |
| Eggs | 2 , separated | |
| Cream of tartar | 1/4 Teaspoon | |
| Sugar | 4 Tablespoon | |
Directions
Line an 8-inch pie pan with vanilla wafers; crumble several of the wafers to fill spaces between cookies in bottom of pie pan.
Pour sweetened condensed milk into mixing bowl; add lemon juice, rind, salt and egg yolks.
Beat with a rotary beater until blended.
Turn filling into pie shell.
Add cream of tartar to egg whites and beat until stiff but not dry.
Add sugar gradually, beating until mixture stands in peaks.
Spread over lemon filling.
Bake in a hot oven (425° F) 5 to 10 minutes or until lightly browned.
Cool before serving.
