Fluffy Omelette Recipe
The taste of this particular Never-fail Fluffy Omelet recipe has occupied my senses so much that I hardly ever go for any other recipe of Never-fail Fluffy Omelet. Ingredients
2 tbsp. quick-cooking tapioca
3/4 tsp. salt
1/8 tsp. pepper
3/4 c. milk
1 tbsp. butter
4 eggs, separated
Directions
Combine tapioca, salt, pepper and milk in saucepan.
Place over low heat; bring to a boil, stirring con- stantly.
Add butter; remove from heat.
Cool slightly.
Beat egg yolks until thick and lemon colored.
Add milk mixture; mix well.
Fold mixture into stiffly beaten egg whites.
Turn into hot greased 10-inch skillet.
Cook over low heat for 3 minutes.
Place in oven.
Bake at 350 degrees for 15 minutes or until knife inserted in center comes out clean.
Cut across omelet crosswise 1/2 of the way through.
Fold over carefully; serve on hot platter.
