Neptune Salad Primavera Recipe

Neptune Salad Primavera is very easy and yummy. It took me a bit of time to develop this Neptune Salad Primavera recipe but the result was great. Do make it!

Ingredients

 
2 cups whole wheat sesame pasta spirals
 
3/4 pound white fish fillets (such as haddock, cod, flounder)
 
2 cups broccoli florets
 
1 sweet red pepper, cut into strips
 
4 scallions, cut into 2-inch strips
 
2 cups cherry tomatoes
 
2 tablespoons olive oil
 
1 tablespoon Dijon mustard
 
2 tablespoons tarragon vinegar
 
2 teaspoons minced fresh parsley
 
1 teaspoon lemon juice
 
1/2 teaspoon marjoram
 
1/4 teaspoon dry mustard
 
Dash of thyme

Directions

Bring a large saucepan of water to a boil, add the pasta, and cook until al dente, about 8 to 10 minutes.
Rinse under cold water until cool.
Set aside.
In a large skillet, bring about 1/2 inch of water to a boil, reduce heat, add the fish fillets, cover, and poach just until opaque, about 8 to 10 minutes.
Remove the fish carefully and set aside to cool.
Steam the broccoli just until slightly tender, about 3 minutes.
Rinse under cold water until cool.
Place the pasta, broccoli, red peppers, scallions, and cherry tomatoes in a medium-size serving bowl.
In a small bowl, combine the oil, Dijon mustard, vinegar, parsley, lemon juice, marjoram, mustard, and thyme.
Pour over the salad and toss well.
Cut the fish into bite-size pieces, add to the salad, and toss gently until combined.
