Neapolitan Chicken Recipe
Ingredients
| 2 broiler-fryers (about 2 pounds each) cut up 1/4 cup flour | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 2 tablespoons olive or salad oil | ||
| 1 medium-size onion chopped (1/2 cup) | ||
| Garlic | 1 Clove (5gm), minced | |
| Water | 1 Cup (16 tbs) | |
| 1 envelope spaghetti-sauce mix | ||
| 3 medium-size tomatoes, chopped | ||
| Parsley | 1/4 Cup (16 tbs), chopped | |
| 6 medium-size potatoes, pared and cut in 1-inch cubes | ||
| 1 large green pepper seeded and cut into wide strips | ||
Directions
Shake chicken with flour, salt, and pepper in paper bag to coat well.
Brown a few pieces at a time, in olive oil or salad oil in large frying pan; place in an 8-cup baking dish.
Saute onion and garlic until softened in same frying pan; stir in water, then spaghetti-sauce mix; heat to boiling.
Stir in tomatoes and parsley.
Simmer, uncovered, 15 minutes.
Pour over chicken in baking dish; top with potato cubes and green pepper strips; cover.
Bake in moderate oven (350°) 1 1/2.hours, or until chicken is tender.
