Ingredients
| Canola oil | 1 Tablespoon | |
| Turkey | 1 Pound, skinned | |
| 1/4 lb. diced lowfat Polish sausage | ||
| Green onions | 1/4 Cup (16 tbs), sliced | |
| Tomatoes | 2 , diced | |
| 1 cup cooked peas | ||
| Mushrooms | 1 Cup (16 tbs), sliced | |
| 1/4 cup olive or canola oil | ||
| 1/3 cup chicken broth or bouillon | ||
| 3 tablespoons tarragon vinegar | ||
| Lemon juice | 1 Tablespoon | |
| Watercress | 1/4 Cup (16 tbs), minced | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 1 tablespoon Dijon-style mustard | ||
| Corkscrew pasta | 6 Ounce, uncooked | |
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
GETTING READY
1) In a large bowl combine tomatoes, peas and mushrooms.
2) In a small bowl, prepare dressing by combining oil, chicken broth, vinegar, lemon juice, watercress, salt, pepper and mustard.
3) Follow the package direction to cook the pasta. Drain and set aside.
MAKING
4) In a large skillet heat oil.
5) Place turkey to sauté over medium heat until tender.
6) Add sausage and green onions, sauté for another 2 to 3 minutes.
7) Remove from heat.
8) Add the turkey mixture into the large bowl of vegetable mixture.
9) Spread the dressing on top and toss thoroughly.
SERVING
10) Sprinkle with Parmesan cheese before serving.
