 Flour1 1/4 Cup (16 tbs)
 Baking soda1/2 Teaspoon
 Baking powder1/2 Teaspoon
 Butter1/2 Cup (16 tbs)
 Brown sugar1/2 Cup (16 tbs)
 Sugar1/2 Cup (16 tbs)
 Smooth peanut butter1/2 Cup (16 tbs)
 Egg1
 Salted peanuts1/2 Cup (16 tbs), roasted
 1/2 cup mini chocolate chips

Directions

1. Preheat the oven to 350°F with the rack in the middle section. Cover a 14" X 16" baking sheet with foil sheet, shiny side up. Coat the foil with vegetable spray or use a silicone liner.
2. Sift together flour, baking soda, and baking powder.
3. Cream butter, brown sugar, sugar, and peanut butter in the bowl of a standing mixer fitted with the paddle attachment. Add egg and mix thoroughly. Add sifted dry ingredients. Fold in peanuts and mini chocolate chips.
4. Chill dough in the refrigerator 1 hour, or until it is firm enough to handle. With floured hands or wearing disposable gloves, roll dough into balls about 1 inch in diameter. Place balls on baking sheet 2 inches apart and flatten with the bottom of a glass dipped in flour. Bake 12 minutes, or until golden brown. Cool on rack. Store between sheets of parchment paper or waxed paper in a covered tin.
