Nectarine Marmalade Recipe
Ingredients
1 orange 1
1 lemon 1
1 cup water 250 mL
Juice of 1 lemon
2 lbs ripe nectarines or peaches 1 kg
5 cups granulated sugar 1.25 L
Half bottle liquid pectin
Directions
In a blender or food processor, grind orange and lemon with water.
Transfer mixture to a saucepan and add juice.
Bring to a boil over medium heat.
Allow to boil, covered, for 20 minutes.
95 Into a pot of boiling water, drop nectarines.
Allow to boil for 20 seconds, then remove from heat.
Transfer to a bowl of cold water for half an hour or until cool.
Remove nectarines, peel and chop.
Add to citrus mixture and boil hard for 2 minutes.
Add pectin and boil until a jelly thermometer reaches 221° F (112° C).
Remove from heat.
Stir and skim off foam for about 10 minutes.
Pour into hot, sterilized jars and seal.
