Nectarine Quick Shortcake Recipe
Ingredients
1 1/2 cups packaged biscuit mix
1/2 cup milk
1 egg
2 tablespoons granulated sugar
1/2 teaspoon grated lemon peel
2 nectarines
2 tablespoons butter or margarine
1/3 cup granulated sugar
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
Dairy sour cream
Directions
In mixing bowl combine biscuit mix, milk, egg, the 2 tablespoons granulated sugar, and lemon peel; stir just till dry ingredients are moistened.
Spread batter in greased 8x8x2-inch baking pan.
Peel and pit nectarines; cut into 1/4-inch thick slices.
Arrange nectarine slices in rows atop batter.
Melt butter or margarine; drizzle over nectarine slices.
Mix the 1/3 cup granulated sugar, brown sugar, and cinnamon; sprinkle over nectarine slices.
Bake at 400° for 18 to 20 minutes.
