2. Turn onto a floured surface and knead lightly until smooth. Roll out the dough thinly and cut out ten 7.5 cm (3 inch) circles and ten 5 cm (2 inch) circles.
3. Place on a baking sheet and bake in a preheated oven, 180°C/350°F, for 12-15 minutes, until golden. Transfer to a wire rack to cool.
4. Whip the cream and liqueur together until soft peaks form. Place in a piping bag fitted with a large fluted nozzle.
5. Cut the nectarines into slices and brush with the lemon juice. Arrange half of the nectarine slices on the larger pastry rounds and cover with piped cream whirls. Arrange the remaining nectarine slices on top and cover with the smaller rounds.
