Neapolitan Tomato Sauce for Two Recipe
Ingredients
| Tomatoes- 350 g (12 oz), skinned and roughly chopped, or Tomatoes- 226 g (8 oz) can, with their juice | ||
| Garlic | 1 Clove (5gm), skinned | |
| Olive oil | 30 Milliliter | |
| Fresh Oregano, Marjoram, Basil or Parsley- 1 sprig, or Dried- 1.25 ml (1/4 teaspoon) | ||
| Sugar | 1.25 Milliliter | |
| Salt | 1 To taste | |
| Pepper | 1 To taste | |
Directions
MAKING
1) In a saucepan, place together tomatoes, garlic, oil, herbs, sugar and seasoning.
2) Heat the tomato mixture to the boil.
3) Simmer, for about 10 minutes until the oil has separated from the tomatoes.
4) Stirring the mixture frequently.
5) Check and adjust the seasoning.
SERVING
6) Serve hot, or leave to cool and store in a covered bowl in the refrigerator for up to 4 days.
