Ingredients

 Tomatoes- 350 g (12 oz), skinned and roughly chopped, or Tomatoes- 226 g (8 oz) can, with their juice
 Garlic1 Clove (5gm), skinned
 Olive oil30 Milliliter
 Fresh Oregano, Marjoram, Basil or Parsley- 1 sprig, or Dried- 1.25 ml (1/4 teaspoon)
 Sugar1.25 Milliliter
 Salt1 To taste
 Pepper1 To taste

Directions

MAKING
1) In a saucepan, place together tomatoes, garlic, oil, herbs, sugar and seasoning.
2) Heat the tomato mixture to the boil.
3) Simmer, for about 10 minutes until the oil has separated from the tomatoes.
4) Stirring the mixture frequently.
5) Check and adjust the seasoning.

SERVING
6) Serve hot, or leave to cool and store in a covered bowl in the refrigerator for up to 4 days.
