Navy Beans Cajun Style Recipe
Ingredients

| 2 carrots, pared and diced | ||
| Garlic | 2 Clove (5gm), smashed | |
| 1 1/4 cups dried navy beans, soaked 8 hours in cold water | ||
| 2 tsp Cajun bean seasoning | ||
| Cayenne pepper | 1/4 Teaspoon | |
| Sage | 1/2 Teaspoon | |
| Thyme | 1/2 Teaspoon | |
| Oregano | 1 Teaspoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Heat oil in saucepan over medium heat. Add vegetables and garlic; stir, cover and cook 6 minutes.
Add drained beans and mix. Incorporate remaining ingredients. Gradually pour in enough cold water to cover beans by 254 in (6.5 cm). Season generously with salt and pepper.
Cook, partly covered, 2 1/2 hours over medium heat. Stir several times, adding more water as needed.
