Ingredients

 
Ghee-1/2 cup
 
Onions-2 medium, finely chopped
 
Green ginger-1 teaspoon, grated
 
Garlic-2 cloves, crushed
 
Plain yogurt-5 tablespoons
 
Basmati rice-1 cup, pre-soaked
 
Green peas-1/2 cup
 
Water -2 1/2 cups
 
Salt- to taste
 
cream cheese cubes -2 ounces, lightly fried
 
Dash of saffron strands
 
Assorted food colorings
 
Mixed nuts (almonds pistachios and cashews)- 1/2 cup, chopped
 
Fresh tomatoes-2, round slices
 
Powdered spices:
 
Garam masala-1 teaspoon
 
Red chili powder -1/2 teaspoon
 
Whole spices:
 
Cloves -4
 
Black peppercorns-8
 
Bay leaves-2
 
Green cardamom pods -2
 
Brown cardamom pod -1
 
Cinnamon -1 (1inch) stick
 
Black cumin seeds-1/2 teaspoon

Directions

MAKING
1)In a pan, heat half the ghee and fry half of the onion with all the whole spices, until golden.
2)Add powdered spices, ginger, garlic and yogurt. Stir well.
3)Now add the rice and green peas and stir well.
4)Add water, salt and bring boil and decrease heat. Cook for 10 minutes until rice is almost done.
5)Turn off heat and add the cream cheese and mix.
6)Put dividers in the pan to divide the rice into number of segments.
7)In one segment sprinkle saffron and rest of the segment with other colors of your choice.
8)Turn on the heat and cook on low for 5 minutes.
9)In a pan, heat ghee and fry onion until golden. Keep aside for later use.
10)In the same pan, fry the nuts and put aside.

SERVING
11)Pour the rice in serving dish and arrange the tomato slices around the rice, sprinkle the fried onion and the nuts and serve hot.
