Native Codfish Stew Recipe
Native Codfish Stew was my family cook's signature dish, now that he's gone I have taken up the task of preparing it for the family. A great Appetizer recipe is one like this. It is always prepared with Seafood as the most essential ingredient. You will definitely thank me for sharing this Native Codfish Stew.
Ingredients
1 lb. salted codfish
1 clove garlic
2 tbs. shortening (or margarine)
2 medium onions, sliced
1 1/2 cups potatoes, diced
2 cups canned tomatoes
2 tsp. chopped parsley
1/2 cup water
1 pkg. frozen peas
Directions
Wash and soak codfish in water overnight.
Drain; separate into small pieces removing bones and skin.
Brown garlic in shortening and remove from pan.
Add codfish and cook for a few minutes.
Add remaining ingredients, cover and simmer for 30 minutes.
