Ingredients

 Egg yolks3
 Whole egg - 1 and 1 yolk
 Olive oil - 1-1/3 to 1-1/2 cups
 Lemon juice3 Tablespoon
 Salt To Taste
 Ground pepper1 To taste

Directions

MAKING
1 In a small bowl, or a blender jar add the egg yolks with a pinch of salt, pepper, and 1 tablespoon of the lemon juice.
2 Beat until thick.
3 Gradually pour in the oil, whisking constantly.
4 Add drop by drop at first, until the mixture thickens.
5 Whisk constantly, adding the oil in a slow, thin stream until the mayonnaise is thick.
6 Add in the remaining 2 tablespoons lemon juice, salt and pepper to taste.

SERVING
7 Serve as desired.

TIP
Add some water to dilute if too thin.
