Nantucket Morning Glory Muffins Recipe

| Sugar | 2 1⁄2 Cup (40 tbs) | |
| Soda | 4 Teaspoon | |
| Cinnamon | 3 Teaspoon | |
| Salt | 1 Teaspoon | |
| Apples | 4 Cup (64 tbs), grated | |
| Raisins | 1 Cup (16 tbs) | |
| Pecans | 1 Cup (16 tbs) | |
| Coconut | 1 Cup (16 tbs) | |
| Carrots | 1 Cup (16 tbs), grated | |
| Eggs | 6 | |
| Oil | 2 Cup (32 tbs) | |
| Vanilla | 4 Teaspoon |
Directions
In large bowl, put flour, sugar, soda, cinnamon and salt.
Stir in apples, raisins, pecans, coconut and carrots.
Beat eggs with oil and vanilla and stir into flour mixture until batter is just combined.
Spoon into paper-lined muffin tins.
Bake at 350° for 30 minutes or until springy to touch.
