Ingredients

 All purpose flour4 Cup (64 tbs)
 Sugar2 1⁄2 Cup (40 tbs)
 Soda4 Teaspoon
 Cinnamon3 Teaspoon
 Salt1 Teaspoon
 Apples4 Cup (64 tbs), grated
 Raisins1 Cup (16 tbs)
 Pecans1 Cup (16 tbs)
 Coconut1 Cup (16 tbs)
 Carrots1 Cup (16 tbs), grated
 Eggs6
 Oil2 Cup (32 tbs)
 Vanilla4 Teaspoon

Directions

In large bowl, put flour, sugar, soda, cinnamon and salt.
Stir in apples, raisins, pecans, coconut and carrots.
Beat eggs with oil and vanilla and stir into flour mixture until batter is just combined.
Spoon into paper-lined muffin tins.
Bake at 350° for 30 minutes or until springy to touch.
