Nancy's Pork Rice Skillet Recipe
Ingredients
| 1 pound boneless pork, cut in 2 x 1/4 inch strips | ||
| Onion | 1/2 Cup (16 tbs), chopped | |
| Salt | 1 Teaspoon | |
| Water | 2 1/2 Cup (16 tbs) | |
| 1 cup converted rice | ||
| Chili powder | 2 Tablespoon | |
| Green pepper | 1/2 Cup (16 tbs), diced | |
| Succotash package | 1 , frozen | |
| Diced tomato | ||
Directions
Brown pork and onion in a large skillet; sprinkle with 1/2 teaspoon salt.
Stir in water, rice, chili powder and remaining salt; bring to a boil.
Simmer, covered, 15 minutes.
Stir in green pepper and succotash; simmer, covered, 5 minutes longer.
Remove from heat; let stand, covered, until all liquid is absorbed, about 5 minutes.
Top with diced tomato if desired.
Stir in water, rice, chili powder and remaining salt; bring to a boil.
Simmer, covered, 15 minutes.
Stir in green pepper and succotash; simmer, covered, 5 minutes longer.
Remove from heat; let stand, covered, until all liquid is absorbed, about 5 minutes.
Top with diced tomato if desired.
