Directions
MAKING
1. To make the pancakes, in a bowl, mix flour and baking powder.
2. Measure almond milk in a measuring cup and add 2 eggs and vanilla extract to it. Whisk until well blended.
3. Add the liquid ingredients to the flour and whisk quickly and gently to make a batter.
4. Grate apples and add to the batter. Stir well.
5. Heat a non-stick frying pan and grease with a little oil.
6. Spoon large amount of batter and spread evenly to form a large pancake. Cook until golden brown on bottom then flip over and cook on the other side.
SERVING
7. Remove to a plate and sprinkle the pancakes with icing sugar.
Scrambled Eggs
MAKING
1. In a bowl, crack the eggs. Add almond milk, and season with salt and pepper.
2. Whisk the eggs until well blended.
3. Stir in the chopped mixed herbs.
4. Heat a non-stick frying pan and melt the butter or heat oil in it.
5. Pour in the egg mixture and cook, stirring gently until soft and creamy.
SERVING
6. Spoon over bagles and sprinkle with additional herbs if you like.
