Mystery Marmalade Recipe
Ingredients
| Cucumbers | 2 Cup (16 tbs), finely chopped | |
| Sugar | 4 Cup (16 tbs) | |
| Lime juice | 1/2 Cup (16 tbs) | |
| 2 tbsp. grated lime peel | ||
| Few drops of green food coloring | ||
| 1/2 c. fruit pectin | ||
Directions
Place the cucumbers in a large saucepan, then add the sugar, lime juice and peel.
Mix well.
Place over high heat and add food coloring.
Bring to a rolling boil and boil for exactly 1 minute, stirring constantly.
Remove from heat and stir in pectin immediately.
Skim off foam.
Cool for 5 minutes, stirring and skimming.
Ladle quickly into sterilized glasses and cover with 1/4 inch hot paraffin.
