Mutzenmandeln Recipe
Ingredients
2 cup flour
2 tsp baking powder
1/4 cup granulated sugar replacement
3 eggs
1 tsp rum extract
1/2 tsp almond extract
1/3 cup cold margarine
2 tsp water
Oil for deep-fat frying
Directions
Combine flour and baking powder in sifter; sift twice.
Pour into large bowl, pushing flour mixture up the sides of the bowl, and add sugar replacement, eggs and flavorings to center well.
Push and work flour into egg mixture.
Add cold margarine and work into crumbs.
Add water, only if needed to make smooth, firm dough.
Chill slighdy.
Roll out 1/2 in. (1 cm) thick on lightly floured board, and cut into 2 x 1 in. (5 x 2 cm) rectangles.
With sharp knife, cut each rectangle lengthwise into small strips.
Fry in hot, deep fat (365°F or 180°C) until golden brown.
Remove with slotted spoon to absorbent paper.
