Ingredients

 Mutton1 Pound
 Potatoes1 Pound
 Onion1 Large
 Leeks3
 Garlic1 Clove (5gm)
 Tomato1
 Cabbage1 Small
 Mixed herbs1 Bunch (100gm)
 Celery stick1

Directions

Slice the onion, the white part of the leeks, the garlic and the skinned tomato into a saucepan.
Now put on these a layer of mutton: then shredded cabbage, a bunch of mixed herbs,salt and pepper, and the celery.
Cover with water just to the top of the meat and boil for 10 minutes.
Then add the sliced potatoes, and simmer slowly and gently for i hour.
Serve the mutton in a hot dish, with three-quarters of the vegetables arranged round it.
Mash the rest of the vegetables, thin them with a little of the cooking stock, and pour it over the meat.
The rest of the stock can be used to make an excellent soup.
