Directions

GETTING READY
1. In a mixing bowl, marinate the mutton with turmeric, black pepper, red chilly powder, ginger powder, garlic powder and salt.

MAKING
2. When marinated well, cook the mutton in a pressure cooker until it softens.
3. For making dry masala - In a pan, heat some oil and a sauté fennel seed, cinnamon sticks, cardamom and bay leaves.
4. Add sliced garlic and whole red chillies. Sauté for a while.
5. When garlic is tender, add chopped onions and sauté for a while.
6. Add chopped onions and sauté till it is light brown.
7. When onions are golden add tomato and cook over low flame till it turns really thick.
8. Add mutton to this masala and stir for a while. Turn off the heat.

SERVING
9. Garnish with cilantro and curry leaves. Serve with rice or chapatti.
