Ingredients

 
500 gms. mutton
 
4 garlic cloves, chopped
 
250 gms. spinach
 
2 green chillies, chopped
 
4 onions, chopped
 
1 ginger, chopped
 
10 tablespoons ghee
 
Coriander leaves, chopped
 
2 teaspoons coriander powder
 
2 tomatoes chopped
 
2 teaspoons salt
 
3/4 teaspoon caraway seed and cardamom powder
 
3/4 cup sour curds, beaten

Directions

Cut and boil the spinach with one chopped onion.
Grind to a paste, adding a few drops of green coloring.
Heat the ghee and brown the meat in it, stirring briskly.
Add the remaining onions, coriander powder, caraway seed and cardamom powder, garlic, chillies, ginger and coriander leaves.
Keep stirring till the meat begins to stick to the bottom.
Put in the tomatoes, salt, curds and four cups of water.
Close tightly and put a weight on the lid.
When the meat becomes tender, add the spinach.
