Mustardy Lamb Fillets Recipe

Ingredients

 
Sauce
 
2 tsp flour
 
1/2 cup white wine
 
1/2 cup chicken broth
 
2 tsp olive oil
 
2 tbsp butter
 
16 lamb fillets
 
4 shallots, minced
 
1 garlic clove, crushed
 
2 tbsp hot mustard

Directions

In a bowl, dilute flour in wine and broth.
Set aside.
In a skillet, heat oil and melt butter.
Lightly brown lamb fillets.
Remove from skillet.
Keep warm.
In lamb cooking fat, saute shallots and garlic.
Fold in sauce.
While stirring, let liquid reduce 5 minutes.
Place lamb fillets in sauce.
Simmer 5 minutes.
Transfer fillets to a warm serving dish.
Add mustard to sauce.
Over high heat, cook 2 minutes while stirring constantly.
Pour mustard sauce over fillets.
