Mustard Dressing Recipe
Ingredients
| Egg yolks | 3 | |
| Dijon Mustard | 1 Teaspoon | |
| Sugar | 1 Teaspoon | |
| Oil | 1 Pint | |
| Garlic | 1 Clove (5gm), crushed | |
| Wine vinegar | 2 Tablespoon | |
| Fresh/dry tarragon | ||
| Salt and white pepper | ||
Directions
MAKING
1. In a food processor, add the yolks and whisk till creamy; add mustard, seasoning, sugar and garlic and process for another minute
2. While the motor runs, drip the oil in to the mixture, wait for it to begin emulsifying and then add a steady stream of oil
3. After you have used half the oil, add a tablepsoon of wine vinegar and add the rest of the oil
4. Add to a screw top jar and use within two weeks
