Ingredients
| 3kg mussels in the shell | ||
| Wine | 1 Cup (16 tbs) | |
| Onion | 1 , chopped | |
| Bay Leaf | 1 | |
| Butter | 25 Gram, softened | |
| 9 green shallots, finely chopped | ||
| Garlic | 4 Clove (5gm), crushed | |
| Breadcrumbs | 1 Cup (16 tbs), made | |
| Parsley | 1/2 Cup (16 tbs), finely chopped | |
| Lemon thyme | 2 Teaspoon, chopped | |
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
Directions
Scrub the mussels well in several changes of water, scrape off the beards and soak in cold water to cover for several hours. Drain and rinse under cold running water. Place in a large pan with wine, chopped onion and a broken bay leaf, cover and bring wine to the boil, lower heat and allow to steam 5-6 minutes, shaking the pan once or twice until the shells have opened. Discard any unopened mussels. Combine remaining ingredients until well blended, seasoning generously with salt and pepper. Remove top shells from mussels, and cover each mussel with butter mixture, filling the shells to the top. Arrange in baking tins and chill, covered, for 30 minutes or until ready to cook. Place under a preheated grill for 3 minutes, or until tops are golden and butter mixture bubbly.
