6 pounds mussels in the
1 tablespoon butter shell
2 cups mussel juice
1 cup rice
Directions
Cook mussels as in previous recipe until the shells open.
Discard both shells and beards and hold the mussels aside.
Keep the mussel juice.
Gently fry the rice in butter until the grains are translucent.
Add the mussel juice.
Bring to a boil and cover with a tight lid.
Simmer gently for a half hour.
